We visited my blood brother and his family in Atlanta, and so did my parents, and it was then great to have everyone together. I specially love watching all of our kids play and go in some quality cousin time. ❤️
We did some tubing, lots of pool time, a bingo dark, and plenty of chatting and catching upward. We also got to encounter their TWO new dogs, who are both then beautiful and sweet. Our crew really wanted to take their fluffy white puppy home with the states… not certain how our sweet Dixie dog would feel almost that though!
But we're back to life, back to reality, and I'm dorsum in the kitchen. So let's talk food!
This turkey taco rice skillet is a neat all-in-one dinner with lean ground turkey, fluffy brown rice (or you can utilize white rice) and all your favorite taco flavors.

Notes on turkey taco rice skillet:
- The rice for this recipe needs to be already cooked when you stir it in at the stop, so please plan accordingly. (Trust me, this is the better fashion to do it so everything stays fresh and perfectly cooked instead of soupy or overcooked and tough.) It'south a great way to utilise some actress Instant Pot brown rice if y'all make that all the time like I practise!
- I employ brownish rice only white rice is fine here too. Yous could even apply a quick-cook rice if you prefer.
- Bootleg taco seasoning is my favorite, but yous tin can substitute store-bought as well.
- Black beans are our go-to only you could substitute pinto beans if yous prefer. Kidney beans would also work here.

– Pickled carmine onions or pickled jalapeños

Storage tips for taco rice:
- You can keep leftovers in the fridge for 3-4 days and reheat it in the microwave for a yummy lunch.
- Or yous can freeze information technology for 3-4 months. Allow the taco turkey and rice mixture cool completely, and then pack it in a labeled freezer-rubber ziptop bag or container and store it for some other mean solar day.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 small-scale onion, chopped
- 1 small bong pepper, chopped (any color)
- i small zucchini, chopped (optional)
- 2 cloves garlic, minced
- 1 to i.25 lbs. lean basis turkey (I use 93% lean)
- three tablespoons taco seasoning
- 1 (xv oz.) can black beans, rinsed and drained
- 1 (fifteen oz.) can diced tomatoes (I use petit diced tomatoes), drained
- i (11 oz.) can Mexicorn, drained
- 3 cups cooked brownish or white rice (from nigh one loving cup uncooked)
Optional toppings:
- Shredded cheese, sliced or diced avocado, sour cream or Greek yogurt, chopped cilantro, salsa or pico de gallo, hot sauce or pickled jalapeños, etc.
Instructions
- Heat a large skillet over medium heat. Add olive oil.
- Add chopped onion, bell pepper and zucchini, if using. Sauté for 3-4 minutes, then add garlic and stir well.
- Add ground turkey and cook, breaking up with a spatula, until cooked through and no pinkish remains, about v-6 minutes.
- Sprinkle everything with taco seasoning and stir well.
- Add black beans, tomatoes and corn. Bring to a simmer and let melt for three-5 minutes over medium heat to get everything heated through and allow any extra liquid to cook off.
- Stir in cooked brownish rice then plow off heat. Flavour to taste with table salt and pepper if needed.
- Serve hot with desired toppings and savor!
